Yogurt and Cucumber Cold Soup
32oz container of yogurt
2 1/2 C chopped Kirby cucumbers
3/4 C finely chopped fresh mint
3/4 C finely chopped fresh dill
1/2 tsp chopped fresh oregano
1/2 tsp chopped fresh thyme
3 large cloves garlic
1/2 C chopped onion
1/3 C chopped finely chopped walnuts
1 C raisins
Garnish
1/2 C silvered cucumbers
1/2 C Chopped walnuts
extra sprigs of dill
extra virgin olive oil
Mix all ingredients except the raisins and mix well. Chill for at least 15 minutes before serving. Can be made ahead up to 3 days. Just before serving add raisins to each bowl and mix well. Garnish with silvered cucumbers, walnuts and a swirl of olive oil.
