White fish in a Pouch
2lb filet of white fish
(halibut, bass, cod, tripe or even red snapper)
11/2 C tomato chopped
1/2 C onion chopped
1/2 C Basil chopped
1 jalapeno seeded and chopped
1/2 C white wine
Juice of one lemon
4 oz Feta
Salt and pepper to taste
Butter or olive oil-optional
Per heat oven at 350°. Line a large casserole or baking pan with a large piece of parchment paper and lay the filet on top of the parchment. Mix together the tomatoes, onions, basil, jalapeno, white wine and lemon juice and salt and pepper to taste. Smother the fish with the mixture and sprinkle with cheese. Place to pieces of butter on top of the fish or swirl with olive oil if you like. Adding either is optional. Place another piece of parchment over the fish and join the edges with the bottom piece of parchment, folding the edges into each other neatly around until the fish is sealed inside the two pieces of parchment.
Bake at 350° for 30 mins.
