Tammy Milani’s
Traditional Hummus


2 16 oz cans of chickpeas
5 medium cloves of garlic
11/2 cups of good tahini paste(always in a jar never in a can)
1 cup of lemon juice
1 tsp salt
1/4 cup extra virgin olive oil


Drain one can of chickpeas and reserve the juice of the other can. Combine the chickpeas and garlic in a food processor, adding a little lemon juice so that the chickpeas are moist enough to blend with the garlic and blend until the mixture is smooth. Blend in the tahini paste, a little more lemon juice and salt. Finally, blend in the remaining lemon juice.

Tip: Real Hummus should be smooth and creamy so add a little of the reserved liquid until the mixture moves around the processor without appearing too thick.

Spread the hummus on a large plate or platter. Drizzle the olive oil over the mixture.

Variations:
Add color! For a dash of color, sprinkle cayenne pepper or paprika over the hummus.

Decorate! Save a handful of chickpeas before blending and use them to decorate the edges of your serving dish.

Experiment! Hummus is delicious with chopped tomatoes, calamata olives and fresh basil.

Go Milani-style! Mix Zaatar, a Middle Eastern spice available at most Middle Eastern markets, with equal parts of roasted sesame seeds. Sprinkle the Zaatar mixture over the platter of hummus and then add extra virgin olive oil.
